I know it can be overwhelming to decide which ones to spend your money on. I recommend reading the course reviews for each class to see what other students are saying or check out a few that I have taken myself and personally recommend below. 
I really enjoyed this class with Mimi Dietrich because she shares some fabulous new ways to finish the edges and binding on your quilts but the techniques covered in the class can be used for a ton of other different projects as well. This is just an overall great class to have access to so you can go back to it when you’re working on a new project or want to try a different finishing technique.  Since your access to Craftsy courses never expires this is a great resource to have for whenever you need a refresher or are feeling brave to try something new. 
Stacey Trock is awesome! I’m pretty new to her work but she is an author, instructor and amigurumi (crocheted stuffed animal) designer.  She has a fun, laid back approach to teaching and makes some fun, quirky jokes throughout the course. I love her sense of humor and she is super knowledgeable in crochet and shares some fun ways to do things that I’d never tried before. If you want to try your hand at making some adorable little stuffed animals give this class a try! You will learn a ton! It also comes with four patterns for animals you can make and she walks you through how to make each one while teaching you new techniques that you can carry in to your future projects.
Mexican food is a favorite in my house and I learned so much from this class! I make all my corn tortillas from scratch now. They are so easy to make and my kids love to help.  I also like to whip up some the dishes I learned to make in this course when I have company coming over. Everyone can serve themselves and I can lay out vegetarian and gluten free options easily.  Definitely recommend this course!
