Today’s cooking tutorial is about how to make authentic Mexican flour tortillas. I use wheat flour and Lard. I use the pastured one that I rendered myself. But why do you need to eat Lard? Many people think that Lard is unhealthy maybe because it is pork fat. Well, it is actually the other way around. As a matter of fact, it is rich in Vit D, an essential fat-soluble vitamin, and 1 tablespoon of Lard actually contains 1000 IU of Vit D. So, I use Lard and it is a kitchen staple at home. You can use it for cooking, baking, and soapmaking.
To make the flour tortillas, mix in a bowl 2 ¾ cups wheat flour and 5 tablespoons of Lard. Then, measure ½ -¾ cup of hot water and dissolve ¾ tsp of salt. Add this to the bowl together with the dry ingredients and mix. Let is rest for about 30 mins and it will be easier to roll out. Then, pre-heat cast iron skillet at medium heat. Cook at low setting heat for about 30-45 mins and do not add oil.
